So yesterday was Cinco De Mayo which meant, must have something of a Mexican feel to it, for dinner! Guacamole won out, one of my first recipes that I really began to enjoy making and eating.
Ingredients
2 avocados (cubed)
1 small white onion (or 1/3 red onion) finely chopped
1 jalapeno (seeded if you don't want the extra heat)
2-3 garlic cloves crushed and finely chopped (we always add more because Matt is a garlic addict)
1 roma tomato chopped
1 half a lime juice
Optional
2 teaspoons of cilantro finely chopped
I usually skip this because supermarkets only sell cilantro in larger bundles and I feel like I end up wasting far to much of it to make it a worth while purchase. Plus the guacamole is awesome even without it!
Now throw it all into a large ziplock back and mash to preferred consistancy!
Then cut open a corner and squeeze out into a serving dish!
And proceed with Nom Nom Nom-ing....
